In a bowl, whip cold heavy cream until soft peaks form. In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth. Fold whipped cream gently into the mascarpone until light and fluffy.

3. Assemble the layers

Dip each ladyfinger briefly into the cooled matcha soak (don’t oversoak). Arrange a layer in the bottom of your dish or glasses. Add half the cream. Repeat with another layer of soaked ladyfingers and the remaining cream.

4. Chill and dust

Cover and chill in the fridge for at least 4 hours (preferably overnight). Before serving, sift a layer of matcha powder over the top for a signature finish.
