🧾 Ingredients (8-inch round cake)

For the crust:

  • 120g crushed graham crackers or digestive biscuits
  • 50g melted unsalted butter

For the cheesecake filling:

  • 400g cream cheese (room temperature)
  • 150g granulated sugar
  • 200ml heavy cream
  • 3 eggs
  • 2 tbsp plain yogurt or sour cream
  • 2 tbsp all-purpose flour
  • 2.5 tsp Leafmill ceremonial grade matcha powder
  • 1 tsp vanilla extract

👩🍳 How to Make Matcha Cheesecake

1. Prepare the crust

Mix crushed biscuits with melted butter. Press the mixture evenly into the bottom of a lined 8-inch springform pan. Bake at 160°C (320°F) for 10 minutes. Let cool.

2. Make the filling

In a large bowl, beat cream cheese until smooth. Add sugar and mix well. Then mix in eggs one at a time. Add yogurt, flour, matcha, and vanilla extract. Stir in heavy cream until fully blended.

3. Bake

Pour the filling over the crust. Tap the pan gently to release air bubbles. Bake at 150°C (300°F) for 50–60 minutes in a water bath until just set. The center should jiggle slightly.

4. Chill and serve

Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours (overnight preferred). Slice and serve with whipped cream, fresh berries, or dusted matcha on top.
